1 pound peeled and quartered potatoes
2 cups chopped fresh purslane
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
salt and pepper to taste
1) First, boil a pot of water. Add potatoes and boil for 15-20 minutes or until tender. Drain. In a separate pan, cover the purslane with water and boil for 5-7 minutes or until tender. Drain.
2) In your saucepan, melt butter over medium heat. Stir in the flour to make a thick paste; slowly whisk in the milk and stir constantly until thick. Add the salt and pepper to taste.
3) Add in the potatoes and purslane and coat with your sauce.
4) Serve immediately.
