1 pound peeled and quartered potatoes
2 cups chopped fresh purslane
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
salt and pepper to taste
1) First, boil a pot of water. Add potatoes and boil for 15-20 minutes or until tender. Drain. In a separate pan, cover the purslane with water and boil for 5-7 minutes or until tender. Drain.
2) In your saucepan, melt butter over medium heat. Stir in the flour to make a thick paste; slowly whisk in the milk and stir constantly until thick. Add the salt and pepper to taste.Post too long. Click here to view the full text.
